The Brussels-based startup Maash has raised 12 million euros to scale up production of mycoprotein, a protein derived from the mycelium of fungi. The first products containing this meat substitute are expected to hit store shelves by mid-2027.
On the market by mid-2027
Maash has since produced several metric tons of mycelium and tested its applications as an alternative protein source with food manufacturers. Now, the startup—which has a research lab in Anderlecht—is ready to scale up to industrial production, co-founder Gaspard Gilbert told De Tijd.
